Hi Samuele,
If you are looking to create a polygonal surface model at the boundary an area which has been labeled through the editor, the ModelMaker module is usually a good tool for this.  Looking at your image, I suggest using the editor to erase the label in the area outside the head first, so only the sinus area you want is selected.  Then the ModelMaker should work for you.  Optionally you might use Label Map smoothing before running ModelMaker.
